BBQ CHICKEN

  • 3 chicken breast

  • 2 TBSP garlic powder

  • 1 TBSP onion powder

  • 1/2 cup BBQ sauce + additional 1/4 cup of BBQ sauce

  • handful of old fashioned oats (around 1/4 to 1/2 cup)

    DIRECTIONS:

    Add chicken, spices, and 1/2 cup BBQ sauce to crockpot. Cook on high for 3 to 4 hours. Shred chicken, then add the additional 1/4 cup BBQ sauce. Serve on sandwich buns, in bowls, etc.

BRAISED SHORT RIBS

  • 2lbs short ribs

  • 1 pack of taco seasoning

  • 1 can green chiles

  • 1 can diced tomatoes

  • Juice of 1 lime

  • Juice of 1 orange

  • Salt and pepper to taste

    DIRECTIONS:

    Add all ingredients to a crockpot and cook on high until you can easily shred the short ribs. Make tacos, burritos, salads, etc!

CHICKEN TORTILLA SOUP

  • 1lb chicken breast

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 cups chicken bone broth

  • 1 cup water

  • 1 can corn, drained

  • 1 can black or pinto beans

  • 1 can diced tomatoes and green chilis, undrained

  • 11 ounce can enchilada sauce

  • 1 pack of taco seasoning (I like Siete Foods best)

  • 1/2 tsp chili powder

  • salt and pepper, to taste

  • optional toppings: tortilla strips, sour cream, cilantro, shredded cheese, etc.

    DIRECTIONS:

    Add all ingredients to your crockpot and cook on low for 8 to 10 hours or on high for 3 to 4 hours. Once cooked, shred chicken, add into bowls and add toppings of your choice.
